Did you manage to find the solution? You might want to refer to Section 5.7 of the Cantorum Duo manual. I had no problem setting up Expression Pedal 1 either as a crescendo pedal or just to control volume.

Please, help me!
I have a Cantorum Duo, new one, and I'm really very satisfied. Only thing, that worries me, is not working 1.expression pedal. I hope, it's only my misunderstanding. 2.expression pedal works beautiful, all combinations etc. works great too. What could be a solution? What I do wrong? Why 1. expression pedal doesn't work?
